Tried to install High Sierra to test it out, and I couldn’t get the disk recognized by the installer. Solution? Boot from your Sierra ISO (not High Sierra) and format the disk with HFS+J, then reboot into the High Sierra installer, and do what needs to be done; the disk will now be available.
